I need a coffee cake recipe that uses 'coffee' in the recipe, kind of like a 'coffee flavored cake'. NOT the traditional coffee cake with a crumb topping. Any info on this would be greatly appreciated... THANKS!

I know of one is called a "Red Earth Cake"and the recipe is
/2 c. Crisco
1 1/2 c. sugar
2 c. flour
1 c. buttermilk
1/4 tsp. salt
1 tsp. soda
2 eggs
2 tbsp. cocoa
1 tsp. red food coloring
3 tbsp. or more coffee
1 tsp. vanilla

FILLING:

1 stick butter
1 lb. powdered sugar
2 tbsp. cocoa
1 tsp. red coloring
3 tsp. coffee
1 tsp. vanilla

Cream Crisco and sugar. Add eggs, add buttermilk gradually with flour, soda and salt. Make paste of cocoa and coloring, coffee and vanilla. Add paste to preceding mixture. Bake in 2 greased, floured 9 inch pans at 350 degrees. Frost with red with filling.
Filling: Make paste of cocoa, coloring, coffee, and vanilla. Add to butter and sugar mixture.

One of my favorite cakes is Angel Food Cake with Coffee Buttercream Icing.

1 cup butter (or half crisco half butter)
1 tsp vanilla
4 cups powdered sugar
2 Tablespoons strong coffee
Cream butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add coffee and beat at medium speed until light and fluffy.
