If you mean to drink while you're eating Cream of Mushroom soup, the answer would be either a sparkling wine or a Beaujolais, depending on your preference for white or red.

If you mean to mix with it while cooking a dish or making a sauce, it would depend on what else is in the dish.

For a reasonably priced sparkling wine, consider a Vinho Verde or Chateau Ste Michelle Cuvee Brut and for beaujolais my personal budget favorite is Louis Jadot Beaujolais-Villages.

a light or white wine, perhaps a white (non-sugary) zinfandel, which is a good wine for those not all that into wine or a sauvignon blanc, a dry white wine
