Remember to mention your cousin's spouse. There is nothing worse than going to a wedding of your loved one, and when it's time for the toast the toaster doesn't even mention the bride (or groom).

It depends on whether you are expected to make a single toast or a set of toasts - if the former, you should toast the bride and groom. Otherwise you should also toast their families, the bridesmaids, best man, matron of honour, absent friends and relations.

Say you're happy for your cousin and that you hope s/he will have a wonderful marriage. Put in some humor and make them chuckle a little but do not embarrass her/him. It's their wedding not a comedy show.

the good parents of the nuptials and how they gained a daughter/son and how good they raise their kids.
wish them good health, wealth and a happy family.
tell a little anectdote about your cousin just as long as its not embarrassing, just something cute or funny that will catch peoples attention. keep it short and sweet.
