Does anyone have a copy of this quite old Anthony Worrell Thompson recipe?

No but here a recipe. Boil the hock for 20min per pound, allow to cool a little and take the skin off. Mix 2 to 3 oz of brown sugar with enough stout to make a paste. Put the hock in a baking tray and smother in the paste, put in 190c oven for about 15 mins or until bubbling.
