I think it's because they used all to be families that ran them. The butchery was passed down through the generations.

A family butcher used to be someone who bought live animals from market and kept them on a piece of land behind the shop. He would then kill them and cut them up as required.

This is now both impractical and illegal. Old established firms who used to be family butchers still use the name. These days, there are no butchers, only meat retailers.

Family butchers means the family is all involved or the business has been run by the same family for generations.

Probably because the business has been in the family a long time and passed from father to son etc. Longevity in a business is attractive to customers, and besides, have you noticed how few butchers there are in your town now? Everybody goes to the hypermarkets.
There is the element of personal service too. Knowing your customer by name and going the extra yard for them...

Because in the past, when small businesses where in the majority in England, a useful and reassuring sales technique was to tell the public that not only were you good at what you did but your whole family did it too.
This re-inforced the idea that you had wholesome family values and that the business was as solid as a rock.
These values are not important nowadays so it is hard for us to understand sometimes.

Family trade i.e. They are all related and help out. Some people wont buy meat from faceless stores.
