Apricots In Caramelized Brandy Sauce
Serves 4

1 cup sugar
½ cup water
¼ cup brandy
2 tablespoons fresh lemon juice
4 cups firm fresh apricots, quartered lengthwise and pitted

Cook sugar on medium heat in 12-inch skillet until it begins to melt. Stir occasionally until sugar is completely melted and golden brown in appearance (about 10 minutes). Add water, brandy, and lemon juice. Reduce heat to low, stirring constantly until caramel is dissolved. Stir in apricots and simmer for about 10 minutes or when fruit is tender.
