the best idea is to be well prepared we normally make our chrimbo cake months in advance and once cooked 'feed' it brandy this does 2 things firstly it gives it a great taste secondly it preserves it and it will last for a couple of years if done correctly (not that it does as it is always eaten).when you fold ingredients in it is best to use a spatula cutting into the mixture from bottom to top creating a 'folding' effect to give more air.stir and fold are basiclly the same and well beating just give it some hell with either a fork or whisk.
this is the recipie we use so here it is....best read the recipie a couple of times before starting....this has been in the family for 70 yrs+
2lb mixed dried fruit 8oz brown sugar
2oz of almonds 1 tablespoon black treacle
3oz glace cherries rind of lemon and orange
4oz mixed peel 1/4 teaspoon mixed spice
8oz self raising flour 4 eggs and vanilla essence
8oz butter 1/2 pint brandy
line cake tin with greaseproof paper. in a large basin put fruit, almonds, cherries, mixed peel and 1 tablespoon of flour, mix well. in another basin cream butter and sugar (by this i meen use the back of a wooden spoon and squash the two together) and add treacle orange and lemon rinds, vanilla and mixed spice. beat well add eggs one by one beating in between each one. sieve the flour and add to fruit mix.add both bowls together.pour in 2 tablespoons of brandy and mix well.pour into cake tin leaving a hollow in the top so it rises evenly and you get a flat top. cook in a slow oven for 1 1/2 hours, reduce the heat to a very low temp and cook for 4 more hours. test with skewer if it comes out clean then it is cooked. leave for about 40 mins then turn out onto wire rack prick with skewer and then feed it the rest of the brandy and let run into cake.
slow oven = 130 degrees celsius
very slow oven = 90 degrees celsuis.

OK, the easiest thing might be to explain the cooking terms to you. Beat means to mix the ingredients together very vigorously. If it's referring to eggs it means whisk and and if it's referring to butter and sugar and/or eggs it means get a wooden spoon and stir it hard and furious till it makes a smooth paste like consistancy. To fold in the flour (or whatever else it's told to to fold in) you tip the flour onto this mixture and with a long spatular or palatte knife scoop under the mix, flip your wrist over and turn the mixture over so that it starts to cover the flour, you repeat this action till the flour is all mixed in too. The differece here is that the action is light and gentle rather than vigourous like the beating. Stir and mix is pretty self-explanatory so you don't need to worry about the mechanics too much.

Creaming butter and sugar just means putting them in a bowl and mixing thoroughly with a wooden spoon until you have a light almost fluffy mixture. If your butter is room temperature and cut into small pieces, it makes it much quicker.
Folding something means mixing it in gently with a spatula to keep in as much air as possible - usually it's flour into a cake mix, or eggwhites into something. Don't go nuts, keep it smooth and slow, and don't mix it too much.

MIX IT ALL UP WITH A WOODEN SPOON OR ELECTRIC MIXER, ITS THE RIGHT CONSISTENCY WHEN IT DROPS OF THE END OF A SPOON WITHOUT YOU SHAKING IT. NOW ADD YOUR FRUIT AND BRANDY OR WHATEVER YOU ARE USING. THATS IT ALL DONE.DONT FORGET TO WRAP SOME PAPER ROUND THE OUTSIDE OF THE TIN OTHERWISE IT WILL BURN BEFORE IT IS COOKED PROPERLY.

No substitute for eggs except EggBeaters. Sorry. Borrow from a neighbor. What an outstanding element to do on your mom. wish it seems good. do not ignore to operate 2 tablespoons of Mayo to the recipe. it will make your cake very moist and it is going to very last more.
