So you can buy ox tail to make into soup. What happens to the rest of the ox?? It's not like you go to the butchers and ask for two ox steaks!! Are there just a lot of tail-less oxen in a field somewhere?

Oxtail
From Wikipedia, the free encyclopedia

Oxtail is the culinary name for the tail of a beef animal. (Formerly, it referred only to the tail of an ox, a castrated bull.) The oxtail of a steer typically weighs 2 to 4 lbs. (1-1.8 kg) and is skinned and cut into short lengths for sale.

Oxtail is a bony, gelatinous meat, and is usually slow-cooked, often stewed or braised. Oxtail stew is a characteristic dish of British cooking; it is also popular in Caribbean countries, and in East Asia. Oxtail is the main ingredient of the Italian dish coda alla vaccinara.

What is ox tail,
In old recipes, it really did mean to use the tail of an ox. Now if you buy ox tails, they are most likely beef (veal) tails that are cut into sections.

SO AS YOU SEE THEY DONT USUALLY USE OX FOR OX TAILS BUT BEEF OR VEAL AND THE REST OF THE ANIMAL IS CUT UP AND SOLD TO US TO ENJOY

It's tail of a cow or steer, nowadays. And very tasty too. It's reminded me of a lovely recipe I have for oxtail casserole with Guinness and dumplings.

Must have that soon, a great winter dish!

I'm eating a large part of one for lunch today - don't know who is eating the rest.

You can also cook oxtail as in a stew or casserole. Bloody delicious.

Friend of mine couldn't eat oxtail 'cause it hung down over a cow's ****! Preferred a boiled egg instead!
