I am a personal trainer and also a vegitarian, I hope this helps

The purpose of eating prior to a workout or competition is to provide the body with fuel and fluid. The idea is to choose foods which will prevent hunger, provide additional carbohydrate fuel, and minimize possible intestinal complications. Generally, the meal should be consumed far enough in advance to allow for stomach emptying and intestinal absorption. A good rule of thumb is to limit the pre-event meal to about 800 calories, and give yourself one hour before the workout for each 200 calories you eat. For example, 5 pancakes, syrup, a banana, and juice would be eaten about 4 hours before a workout. A smaller 200 calorie meal such as a bowl of cereal or a bagel and juice would be eaten between 1 and 2 hours before starting.

Fruit is always an excellent choice for breakfast. It digests easily and will supply you with the right kind of sugar. If you have a fast metabolism and know that you might get hungry, do combine it with oats which will keep your blood sugar stable. If you are a vegetarian and exercise a lot, remember that plant proteins, as in nuts and legumes aren't whole proteins. This means that they can only renew, but not build, new tissue. The only plant protein which can do both is that found in soy beans, so eat a lot of soy-based foods like tofu to build your muscles.

Hey! I am a marathoner and a vegetarian, so I can fill you in. Before your run or your exercise, you want to fill up with carbohydrates and Gatorade or water. Eating 2 pieces of dry toast, or a small bowl of oatmeal with maple syrup are perfect examples of what to eat before hitting up the gym and getting a quality workout. Gatorade is better to drink than water (exercising wise) because Gatorade has sugar in it, giving you more energy and not allowing your body to become dehydrated. After exercising, you want to eat something high in protein within 15 minutes, or else you will just lose your lean muscle. Some good things to eat after are yogurt (with fruit and granola? if you like), a protein shake, egg white omelet (with vegetables? if you like). Good Luck!

You CAN eat anything you want, even meat.

But you should consult a pro. dietician because it depends on your weight, build, workout, and blood tests! on what you SHOULD eat.

I would go with eggs, fruit, and iron rich vegitables, and carrots!
