I wish I knew what resources you had at your disposal and what your girl likes. Would a bed and breakfast trip along with an art gallery exhibit be good, or is she more of the cabin in the woods getaway with hiking type?
What about making from scratch a truly romantic meal?

You should plan a nice evening. Maybe take her out and have her try on beautiful dresses and dont tell her where u guys are going. Just have her get dressed and take her out to a fancy beautiful restaurant and while u guys are out have ur brother, sister or a close friend go in the house and decorate it with rose petals, candles, bath water the whole deal
