This is really not a casserole, but I used to make this for the daycare I cooked at and the kids loved em. Take refrigerator biscuits, roll the biscuit out flat and press into the bottom and up the sides of a muffin pan, spoon large scoop of your favorite chili into the middle of the biscuit and bake at 350 degrees for about 15-20 mins. The biscuit will swell up and surround the chili, when you remove from the oven sprinkle the top with grated cheese. If you let these cool out of the pan the kids can eat them with their hands like a cupcake!

Chicken and Biscuit Pie (20 min prep)
1 reg can swanson chicken
1 reg can cream of chicken soup (no added water or you can add about 1/4 can)
1 reg can mixed peas/carrots (drained)
1 sm can mushrooms (optional) (drained)
salt and pepper to taste
1 tblspoon diced onion
1 sm (5) can cheap biscuits (other are to big and don't cook)
Preheat oven per biscuits, mix all ingredients in a sauce pan and cook on top of stove to heat. Spray small casserole dish w/Pam and pour in dish and flatten biscuits on cutting board and cut twice and lay on top of casserole and cook until biscuits are done. About 20 min and you have dinner. If you need a bigger casserole just double everything. Enjoy!

Here are two recipes that I use all the time.

Baked Penne Pasta:

16 ounces penne pasta or similar shape
1 tablespoon vegetable oil
1/2 cup chopped onion
1 large (28 oz) can tomatoes, broken up
1 teaspoon dried leaf oregano, crumbled
salt and pepper
1 1/2 to 2 cups shredded cheese, Mozzarella or a pizza mixture

Cook penne pasta in boiling salted water as directed on package; drain and set aside. Meanwhile, heat vegetable oil in a medium saucepan. Add onion; sauté for about 4 minutes, or until tender. Add garlic, tomatoes, and oregano; cook until heated through.
Taste and add salt and pepper. Combine cooked penne pasta, sauce and 1 cup shredded cheese in a lightly buttered casserole. Sprinkle remaining cheese on top. Bake penne pasta recipe for about 20 minutes at 350°. Penne pasta recipe serves 6, so you can put in two 8x8 dishes for smaller portions and freeze one, or make in one 9x13 dish.

This one is not a casserole, but an easy stovetop meal that kids love:

1 family size box shells and cheese
1 lb package kiebalsa or smoked sausage
1 small bag frozen broccoli
1 can stewed tomatoes

Cook and drain shells in large pot. Leave shells in colander, and put 2 tablespoons oil in pot. Fry sliced sausage until starting to brown. Add tomatoes with juice and broccoli. Break up tomatoes with spoon. Add cheese sauce packet and stir to melt. Add cooked noodles. Stir to mix, and cook for a few minutes until it's all melted and bubbly. You can serve this right out of the pot. If you want to freeze half, do it in whatever container you have, and just thaw it before reheating on the stovetop or in the microwave.

My kids love both of these, and they freeze okay. Good luck!

Something that my grandmother always made - and which is love by every child and grown up, is macaroni-casserole...

It is healthy, and easy to make :

Mix cooked macaronies (about 4 cups) with already prepeared beef, about a half cup milk, two eggs, salt and pepper... and other spices if you want (mexican spices goes well with the beef!)...
Put the mic in a pan, and put on some cheese...
Bake in oven about 45 mins in 350 F.

This is so easy ... and you can make your own changes in flaour in it; for example, put garlic in it if you want! or... corn...! ;)

Good luck!

Cook hamburger with onion.
Boil elbow macaroni.
While they are cooking butter bread and sprinkle with parmesan cheese.
Cut bread into 1 to 2 inch rectangles.
Mix together burger and macaroni with one can mushroom soup.
Top with bread Bake 30 minutes at 350 F.

-Or as an option just mix the macaroni and hamburger with salsa and skip the bread and baking.

Both are a big hit with little kids.

Tuna Noodle Casserole II

Hi this is Chris and this is my recipe. We're thrilled so many people like it and add whatever items that suit your family's tastes. We use the 98% fat free soups, 2% milk, and shell macaroni because the sauce fills in the little cup shape. If we have fresh mushrooms we add a few. Couple Tbls fresh celery adds a nice texture. One son likes extra cheese so in one corner we put more there. Use the recipe as the base, add what you like, you can't go wrong.

This is a great basic tuna noodle recipe. However, I made a few changes I believe made it even better. First, I cooked the noodles a couple of minutes less than the package calls for, so after baking they will not be overdone. I added a can of mushrooms, and an additional can of soup (either mushroom or celery) to make it creamier and it set up fine. I cut the salt down to 1/2 tsp. because there is salt in the potato chips and sodium in the soup. I figure eaters can always add, but cant take away. I also added 1 1/2 c. peas to the soup mixture at the same time as the noodles, being careful not to mash. I used Mozerella cheese instead of American. And the leftovers are even better! This is a keeper.

This recipe is fantastic. I made 3 changes though. Instead of American cheese, I used 8 oz of shredded Sharp cheddar, I used reduced calorie cream of chicken instead of cream of mushroom (my husband hates mushrooms) and I cut the salt in half. To be honest, you could probably get rid of the salt entirely since tuna and cheese are both pretty salty. My boyfriend does not normally eat or enjoy "comfort food" LOVED this recipe. A++, 5 stars, a real winner!
