Hebrew letters do have numeral value, but this way of counting is very archaic and it is rarely used in Modern Hebrew. We have, alongside with the letters, real numbers that are far more common in modern Hebrew as well as the biblical one:
On the left side: the feminine form of the numbers; on the right side: the musculine form of the numbers. Neutral numbers (numbers of streets, public transport lines, the numbers as you read them one by one) are set in their feminine form.

In old hebrew, What we would call the zero day is one. 'After 8 days' is a week. Same in old French.
