I bought an 8 ounce container of this cheese product (on sale...with a coupon...for like pennies :-) and it's about at the expiration date so I need to use it this week. I don't want to eat it on crackers or as a spread. What else can I do with it? Looking for a recipe or two please...not a cheese ball or appetizer but a main dish if I could find it. I was kind of thinking something like a cheesy-noodle/pasta-chicken thing but I'm open to ideas. It's a white cheddar-like 'cheese' with flecks of dried vegetables in it.

I make this recipe using 1 can of creamed soup (chicken, celery or mushroom). I would sub the WisPride for the cream soup:

Saute 1 chicken breast with 1/2 cup chopped onion. Add 1.5 - 2 cups chopped frozen or fresh broccoli. Add the "cheese", 3/4 cup sour cream and a cup of milk. Stir in 1/3 - 1/2 cup chopped roasted red pepper and 1 cup thin egg noodles, chopped fresh parsley if you have it. Bake at 350 degrees for about 45 mins until noodles are soft. You can top with a bread crumb or cracker crumb topping during the last 15 mins of baking (or use those French fried onions in a can).

All of your ideas sound really good. I think it would really work in a chicken noodle dish. That is making me hungry. I like to use cheesy stuff in my chicken spaghetti in place of tomato sauce.

You said no cheese ball, but you could actually combine it with cream cheese and it will really give the cream cheese an awesome flavor.
Hey, I thought of something. Buy a big round bread and place the cheese inside the middle of it and let everyone break off a piece of bread and dunk in the dip with the cream cheese. How does that sound? Yeah, I know, no spread. Sorry.

My first thought is to make a grilled cheese sandwich. But, this stuff is probably like Cheeze Wiz. There is a recipe for a Broccoli Cheese Casserole, made with Cheeze Wiz here: http://www.recipezaar.com/140728. It uses about the same quantity. Of course, I am sure you could thin it down with some milk or sour cream and add it to macaroni for mac and cheese.

Use as a sandwich spread.

Serve cheese spread on crackers or spread on bread rounds and serve hot.

Spread it on tortilla shells and roll them up and slice them.

Great for bagels too!

The key wording here is, "Cheese product." It's not really cheese. It's just kind of like cheese. High in salt, preservatives, chemicals, binding elements. I'd either use it to spackle my drywall or throw it out.
