A carman ran one of the trolleys or streetcars. Sometimes, a delivery driver of horse and buggy referred to himself that way, but remember individually driven motorized vehicles were very uncommon in any city before 1900.

My Grandfather was named on my fathers birth certificate as a Carman. The only photo of him I have is with his horse and cart delivering coal. The year would have been between 1913 & 1919.

Sounds to me like a carman could have been a railroad worker. There was a big boom of industralization during that period of time. However I am not completey sure, just a quess.

I think it was the name for a man who was employed to look after cows. i.e. `cowman` Due to accents it was possibly pronounced car man.
