I was going to say a gift certificate to a nursing uniform store or some flowers, but you would have to spend a lot for that. So maybe just take some pictures for a scrapbook or give them a personal journal with a first entry from you--with some kind words of inspiration and so forth.

Considering what they have probably just gone through probably not something medical in nature. Maybe gift cards for a massage or to a spa. What a great treat after all that work a gift of relaxation.

I would think that something they could use in their future nursing careers would express your trust and faith in them that they will make good nurses in the future. I'm not a nurse myself, so I'm not sure what that would be, but I'm sure you'd know. Just think: what's something that I used regularly when I started in nursing?
I also like RPCV's idea.
