i wonder if replacing leg for shoulder will effect the recipe?

I am in agreement with the other 2 respondants, being are former chef I will make one recommendation, shoulders are a bit more structured that legs, and if your cooking it medium, make sure not to cook it to hot, brown it and then lower the oven temparture to 350, the meat is not as dense, and with fall apart if over cooked.

If your marinating it, make sure not to use to much acid, it will part cook the meat, wine and lemon juice is fine or herbs like he used, mustard does have some acid so be very careful not to add to much.

Go for it......................
Im a Butcher,and my Wife and i eat shoulder of lamb more than the leg
It has a little more fat ,but that helps the cooking process
Dont forget the MINTSAUCE

YOU CAN USE SHOULDER,ALTHOUGH IT WILL NOT BE AS NICE,AS SHOULDER TENDS TO BE VERY FATTY.
