I'm in a situation w/this man. But I'm falling in love with him. I know he has deeper feelings for me. I can tell. But my question is, How do I take things slow so that I won't scare him off. I've never taken anything slow before. I know not to tell him my deepest feelings. So how do I keep him interested in me besides sex.

If it is something that is meant to be, there is not much you can do to slow it down as you have to go at the speed that is thrown at you and deal with things as they come along.
It is a fine balancing game. If he is keen on you but you say nothing he may leave you thinking there is no future. If you go too fast he may just take what you offer and then leave.
I would suggest that after a few dates you gently tell him how you feel about him and ask him what he wants from you. It is a difficult thing to ask but it has to be broached at some time and this is what always makes or breaks a relationship in the early days and something you both have to get over if you want to be together.
Don't leave him danglingon a string too long before you tell him what you think.

Keep talking to him to make him interested in you. And flirt with him.
