"You should freeze your cake unless you're going to decorate it the same day you bake it. I recommend working on a frozen cake because it is easier to frost, retains the moisture and is easier to "torte" (put frosting between thin layers). It depends. For example, if you make it with real buttercreme frosting, that will only keep for a day or two before it starts to taste funny.
