try making boneless chicken breast :
Ingredients
2 tablespoons Soy sauce
1/4 cup Toasted sesame seeds
2 tablespoons All-purpose flour
1/4 teaspoon Salt
1 pinch Ground black pepper
4 Skinless, boneless chicken breast halves
2 tablespoons Butter, melted
1-Preheat oven to 400 degrees F (200 degrees C).
2-Place soy sauce in a 9x13 inch baking dish. On a piece of wax paper, mix together the sesame seeds, flour, salt and pepper. Dip the chicken pieces in the soy sauce to coat, then dredge in the sesame seed mixture. Arrange in baking dish in a single layer, then drizzle with melted butter.
3-Bake at 400 degrees F (200 degrees C) for approximately 40 minutes, or until chicken is cooked through and tender and juices run clear. Baste with drippings once during cooking time. Garnish with extra sesame seeds if desired, and serve.

as a kid whenever dinners where getting boring, and it seemed like the same old thing, my mom would let my step dad or one of the kids make up the menu, my step dad had like to meals in his brain, taco salad, and steak, or chili, but you never new what the younger kids were gonna come up with, or just make a lot of little things, and have a "snack" night, like make baby burgers, and a few chicken fingers, and alot of little appatizer like things. or an antipasto plater, and some grilled pizzas,have every one help, but keep the toppings funky, pesto and hamburger or pineapple, andsalami. keep it interesting, garanted you may end up eating McDonalds later, you will have great memories of the meal the whole family made

Some of our favorites are: shrimp fried rice (use whatever veggies are favorites - add a little bag of frozen salad shrimp when you scramble in the eggs)
hamburger pie or Sheppard's casserole (cook hamburger or ground turkey, drain, add onion and either canned green beans or mixed veg. and cream soup or tomato soup - put in baking dish - top with prepared instant mashed potatoes (or home made) bake until heated through - top with grated cheese)
meatball subs - meatballs (frozen or homemade) spaghetti sauce and a lot of cheese on sub rolls (or french bread) with your favorite toppings

U can make simple french fries. Just cut some potatoe slices and pop them in the oven with some salt/pepper. Also, if you have chicken, you could fix up some fancy sandwiches. Good luck!

I like to take a bag of mixed vegetables (you can switch off on different mixes)...some rice or noodles...and some chicken, beef, or ham and mix it together...to make the "sauce" I use some butter, some pasta water (if its noodles). Its an old standby, but its very versatile.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

Taco salad
Brown hamberger and put taco seasonings on it with some onions.
Get some lettuce or mixed green salad. Add shreadded cheese, olives, and green peppers to the salad along with taco chips or nacho chips.
It is a favorite with my teenager.
