i have a bunch of oats left over and i dont know what to use them for

People completely underestimate the limits to oats. Oats...like any other grain can be made sweet OR savory. Try making oats by cutting the water down by half. Add more water if the oats do not get chewy enough. Point is you do not want your oats to be soupy like your morning oatmeal. You want them to be drier and mor clumpy. Add to these oats shredded cheddar cheese, green onion, and salt and pepper to taste. You have just made a pretty tasty side to go with ANY meat or veggie dish.

You can always start your day with oatmeal. Throw in a handful of raisins or dried cranberries, serve with milk and brown sugar. yummy!
You can also use your oats (sorry, I keep wanting to say sow your oats...) to make apple crisp, or any fruit crisp for that matter. Just peel, core and slice the apples, place them in a casserole and make a topping of butter, sugar, oatmeal and flour, with a touch of cinnamon if you use apples, or other spices if you use other fruit, pop it in the oven and you have a great desert. There are any number of bars and squares that use oatmeal -- matrimonial cake (a delicious date cake that uses oatmeal) but at our house, oatmeal goes into almost everything. A quarter cup of oatmeal adds a great flavor to the waffle mix, for example, and it's great added to the bread machine mix, with raisins and peel.
That should use up your leftover oats, and send you running out for more when they're all gone.

1/2 cup walnuts, chopped
1 3/4 cups rolled oats
1/2 teaspoon salt
1 teaspoon baking powder
1 cup milk

Preheat oven to 325 degrees.
Grease a baking sheet well and set aside. (Note: To make sure that the crackers come off the pan easily, you can also use a few drops of lecithin along with the oil you use for greasing the pan.).
Place all dry ingredients in blender or food processor and blend until they are consistency of cornmeal. Stop to stir ingredients if they stick.
Stir in milk.
Use a frosting knife or rubber spatula to spread batter thinly and evenly on the well-greased baking sheet.
Place in preheated 325 degree oven and bake slowly until delicately golden, about 15-20 minutes After about 10 mins, use a sharp knife to score the dough in squares, rectangles or desired shape. Watch them carefully, if the crackers on the outside brown faster, remove them and continue to bake the rest.
Crackers are the crispest while they are baking, so loosen them from baking sheet as soon as they come out of the oven to keep them from crumbling.

You can make apple crisp. It's delicious and easy. You can go to the Supermarket and buy the mix and all you add is apples and oats.

Bread, meatloaf, or meatballs. That's the only reason I keep oats on hand.

You can use them in Meat Loaf instead of bread crumbs

I love to make my own granola. You can choose your favorite nuts and dried fruits to go in it, unlike the storebought kind.
