I know you need everclear and either mint leaves or peppermint extract, but I don't know all the minor details.

By the way, I'm looking for a recipe for the actual liquer, not any kind of baked goods. I apologize for not specifying earlier.

If you're an Emeril fan, here's one of his.

Kicked Up Grasshopper Pie
Recipe courtesy Emeril Lagasse, 2000
Show: Emeril Live
Episode: Las Vegas Memories (In Las Vegas)

2 1/4 cups chocolate cookies with a creme center, crushed
1/2 cup melted butter
1 3/4 cups heavy cream
2 1/2 teaspoons unflavored gelatin
4 egg yolks
1/3 cup sugar
3 ounces Creme de Menthe
1-ounce Creme de Cacao
Chocolate curls, for garnish
Mint Sprigs, for garnish
Whipped cream, for garnish

Preheat the oven to 425 degrees F.
In a bowl, combine the cookie crumbs and butter and mix well. Pour the crumbs into a 10-inch pie plate and press into the plate. Place the crust into the oven and bake for 5 to 10 minutes, remove from the oven and cool completely. Add 1/4 cup of the heavy cream to the top of a double boiler. Add the gelatin and gently heat and remove from the heat and set aside. In the bowl of an electric mixer, beat egg yolks and sugar until pale and thick. With the mixer running, drizzle in the gelatin and cream mixture. Remove the egg yolk mixture from the mixer and fold in the liqueurs. Refrigerate for 4 hours until thickened. Whip 1 1/2 cups of heavy cream to stiff peaks. Fold the whipped cream into the thickened egg and gelatin mixture. Pour the mixture into the pie shell and refrigerate overnight. Remove the pie from the refrigerator and garnish with chocolate curls and mint sprigs and whipped cream

Mocha Mint

1 oz. Kahlua
3/4 oz. Creme de Menthe
1/2 oz. Creme de Cacao
Ice
Mix ingredients in a shaker and strain into a chilled cocktail glass.

and this one also sounds good...

Chocolate Rum

1 tsp 151-proof Rum
1 oz Light Rum
1/2 oz Brown Creme de Cacao
1/2 oz White Creme de Menthe
1 tbsp Light Cream
Ice
Chocolate Syrup
Shake with ice and strain into a glass half filled with ice cubes. Drizzle chocolate syrup over the top.

if u like eggnog this is a good drink also ...

Frosty Noggin

1 1/2 oz Rum
3/4 oz White Creme de Menthe
3 oz Eggnog
3 cup Vanilla Ice Cream
Blend until smooth. Top with whipped cream and a few drops of green creme de menthe.

these recipies are a good recipe for creme da menthe... but actually it can be mixed with anything like chocolate, caramel, milk... even strawberries with chocolate or any type of fruity alcohol or juices... if u want more recipies check out...

A really nice shot is a "Girl Scout Cookie" - it's even better when served in a chocolate shot glass.

Mix equal parts:
* Bailey's Irish Cream
* Creme de Cacao
* Creme de Menthe - I prefer the green vs. clear

Yummy!

Stinger:
1 1/2 oz brandy
1/2 oz white creme de menthe
Shake ingredients with ice, strain into a cocktail glass, and serve.
