If you are into music you could take him to Pere Lachaise cemetery to see Jim Morrison grave. Quite a few famous people are also buried there including Oscar Wilde and Edit Piath. It sounds depressing but the cemetery is huge and very pretty with loads of trees and some beautiful graves.
You could also go to the Grande Arche De La Defense, there is a gallery on top and you can go out and look over the city. It's a beautiful piece of modern architecture and less obvious than the Eiffel Tower.
There are also quite a few outdoor ice skating rinks in Paris at this time of year if you fancied something sporty.

If I was going to Paris with my girlfriend I know which romantic thing I would want to do... but it's not suitable for mentioning here!
Anyway I would recommend a ghost tour. They are always fun and a good excuse to have a nice meal and one too many wines afterwards. There is also a tour of the world famous catacombs which nobody remembers to do while they are in Paris because they all go to the tower or the Louvre.

Take a glass boat down the Seinne. Very romantic especially at night when all Paris is lit for the holidays. Also Notre' Dame will still be celebrating the Birth of Jesus Christ during your stay and there are many beautiful things to see there.

Ah, romance in Paris - you picked the right place. I have reviews of restaurants at http://www.bombasticlife.com --- We do lots of romantic dining so there are some good places to chose from - I think you might like Buddah Bar, very trendy, very different - have a great time.
