I'm looking for an easy recipe to make peanut brittle. I would like a recipe that is quick, easy and inexpensive to make. I remember seeing a recipe for microwavable peanut brittle, but I'm not able to find it. I've looked everywhere I can think of.

EASY PEANUT BRITTLE

1 c. sugar
1 c. white Karo syrup
2 c. raw shelled peanuts
1 tsp. soda

Cook sugar, syrup and peanuts together until turns light amber color, stirring as needed. Remove from heat and add 1 teaspoon soda and stir. The soda causes a foaming action. Turn out onto a piece of aluminum foil. Do not try to smooth candy out. Let cool and break into pieces. Let pan cook before washing.

INGREDIENTS
1 cup raw Spanish peanuts /any kind of peanuts
1 cup white sugar
1/2 cup light corn syrup
1/2 cup water
1 teaspoon baking soda
DIRECTIONS
Lay out several sheets of foil to spoon the hot peanut brittle onto.
In a large skillet mix the sugar, syrup, and water together. Cook at a medium-high heat, stirring regularly. Heat until the mixture has a hard ball consistency. You don't need a candy thermometer for this. When stirring, occasionally hold spoon above mixture, allowing it to drip off spoon. When mixture is at hard ball stage, it will "hair" off the spoon when falling, looking like a clear spider web.
Once mixture is at hard ball consistency, add raw peanuts. (They will pop a little.) When mixture starts to turn a light clear-brown, as if it's starting to burn, remove from stove. Add soda and stir. Mixture will foam up.
Spoon out bite-size pieces onto unbuttered foil, stirring constantly between each couple of pieces. Mixture can also be poured onto unbuttered foil as one big piece and broken into smaller pieces once cooled.
This doesn't use a microwave, sorry....

2 cups sugar
8 tablespoons unsalted butter (1 stick)
1/2 cup water, plus
2 tablespoons water
1/3 cup light corn syrup
1/2 teaspoon baking soda
1 1/2 teaspoons salt
12 ounces whole dry-roasted salted peanuts

Spray (nonstick spray) or butter a 12-x-16x1/2-inch pan lightly.
Combine the sugar, butter, water, and corn syrup in a large saucepan and stir until all the sugar is wet.
Cook over high heat, stirring, until the mixture turns medium golden.
Immediately remove from the heat and carefully whisk in the baking soda followed by the salt (take care; the mixture will rise in the pan and bubble).
Fold in the peanuts.
Quickly pour the mixture onto the prepared sheet pan and spread it out using the back of the spoon before it starts to harden.
(It may not cover the whole pan.) Once the brittle is completely cool, break it into bite-size pieces with the back of a knife or other blunt instrument
