Pineapple Fried Rice
INGREDIENTS
1 (8 ounce) can crushed pineapple with juice
4 cups water
2 cups white rice
1 tablespoon peanut or walnut oil
2 eggs, beaten
1/2 teaspoon sesame oil
1 (12 ounce) package tofu, diced
3/4 cup chopped mushrooms
3 tablespoons soy sauce
3 green onions, thinly sliced
1 cup diced carrots
DIRECTIONS
Open can of crushed pineapple and drain juice into a cup.
In a medium saucepan, combine the liquid from the can of crushed pineapple with 3 cups water, bring to a boil. Add rice. Bring mixture to boil. Cover and reduce heat to simmer. Cook 25 to 30 minutes or until rice is tender.
In a non-stick wok heat the 1 tablespoon walnut or peanut oil. Add the eggs and cook without stirring, until set. Slide eggs out of the wok to a plate - cut into short, narrow strips. In the same wok, heat the sesame oil and stir fry the tofu with the mushrooms, soy sauce, green onions, and carrots for about 4 minutes. Stir in cooked rice, pineapple, and egg strips. Heat until everything is heated through.
If you want, you can use a normal pineapple and cut the pineapple's skin(after and before: rinse in salt water so your tongue won't feel itchy) Slice into tiny pieces.

Thai fried rice
2 tb Vegetable oil 4 c Cooked long grain rice
2 ea Garlic cloves, crushed 3 tb Soy sauce
2 ts Red curry paste, see recipe 1 ea Green onion, chopped
1/2 lb Tofu, diced 1 tb Cilantro leaves, chopped
----------------------------------GARNISH----------------------------------
10 ea Green onions Thin cucumber slices
Heat the oil in a wok over medium-high heat. Add the garlic & stir-fry for
1 minute. Add the curry paste & stir-fry until it releases its aroma. Add
the tofu & cook another 3 minutes. Add the rice, mix & fry for 2 minutes.
Add the soy sauce, green onion & cilantro & transfer to a serving dish &
garnish. Serve with a clear soup & a salad & this makes a good meal in
itself. Serve with chilies in vinegar on the side: Chop 1/2 c fresh green &
red chilies & chop them into small pieces. Add to 1 1/2 c rice vinegar
mixed with 1 tb soy sauce. Serve immediately.

Matsaman Curry ( Gang Garee Gai )
Ingredient For 6 People ( Medium Spicy )
2 Tablespoons Yellow Curry Paste
500 gms Chicken Legs
300 ml Coconut Milk
400 ml Water
250 gms Potato
5 Tablespoons Fish Sauce
1 Tablespoon Salt
100 gms Sugar
10 gms Coriander Leaves for Garnish
Preparation
1. Put the coconut milk into the pan and bring to the boil.
2. When the coconut milk is boiling add the curry paste and mix it into the coconut milk.
3. Clean the chicken legs and score with a knife, then put into pan.
4. When the curry is boilng again add the water into pan.
5. Add the fish sauce, sugar, and salt and cook for 30 minutes.
6. Chop the potatoes into 5 cm cubes and put into the curry pan.
7. Cook for 30 minutes.
8. Serve it when it warm, garnish with a little chopped coriander leaf.

THAI CHICKEN
4 chicken breasts, cut
1 cup salsa
1/3 cup peanut butter
2 teaspoons soy sauce
2 teaspoons balsamic vinegar
1 teaspoon molasses
2 teaspoons water
1 teaspoon chili powder
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1 teaspoon sesame seed
2 teaspoons oil
3 cups rice, cooked
Bring to boil salsa, peanut butter, soy sauce, vinegar, molasses and water, stirring often. Keep warm.
Combine chili powder, ginger and garlic powder in plastic bag. Add chicken strips to bag and shake to coat.
In skillet or wok, stir-fry chicken in oil over meduim-high heat, 2-3 min. or until cooked.
Spoon sauce over rice on plates; arrange chicken and sprinkle with sesame seed.
Optional: Garnish with green onion and chives.
