Ascorbic acid is an organic acid with antioxidant properties. Its appearance is white to light yellow crystals or powder. It is water soluble. The L-enantiomer of ascorbic acid is commonly known as vitamin C.

Although Ascorbic acid has no carboxylic group, you might wonder why it is acidic?....Well...the carbonyl group on an adjacent carbon withdraws and delocalise electrons to cause the dissociation of the hydroxyl group on the next carbon atom to cause the acidity of ascorbic acid. Yes, processed from most citris fruits. You can buy "raw" citric acid and use it as a color preservative in cooking/canning. You can also mix it with water and it tastes like the cheap powered lemonaids you buy in the store. It is harmless.
