I'm out of granulated sugar...I need to find some alternatives!

Sure, but keep in mind that brown sugar has more moisture than white sugar, so your cookies may turn out a little differently. Not bad, of course, just different. And don't believe people when they say that brown sugar is "healthier." These days, brown sugar is typically made by adding molasses back into white sugar.

Yes you can. In fact your baking will probably be moister by using the brown sugar. White sugar is more dense so you will need to pack the brown sugar firmly into the measuring cup in order to get the equivilant.

I use brown sugar all the time, it is better for you than the white. Here is my recipie
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup Softened (Not melted) butter
1 1/3 cups packed brown sugar
2 eggs
1 tsp. vanilla
2 cups chocolate chips

blend butter, brown sugar and eggs til light and fluffy
stir in salt and soda mix well. add vanilla stir again add flour 1/2 cup at a time mix well
bake at 350 for 10 minutes

Yes they will just taste like chip-less chocolate chip cookies. This is a fine substitute and if you want add any nuts or candy bits you have on hand - have fun cooking!

ABSOLUTELY... They will rise alittle more than usual while baking but the flavor is fabulous. I always make my choc. chip cookies with just the brown !
