Because Jesus said, "What goes into a man's mouth does not make him 'unclean', but what comes out of his mouth, that is what makes him 'unclean'. (Matthew 15:11)

Paul also wrote, "One man's faith allows him to eat everything, but another man, whose faith is weak, eats only vegetables. The man who eats everything must not look down on him who does not, and the man who does not eat everything must not condemn the man who does, for God has accepted him." (Romans 14:2-3)

He continued, "One man considers one day [the Sabbath] more sacred than another; another man considers every day alike. Each one should be fully convicted in his own mind. He who regards one day as special, does so to the Lord. He who eats meat, eats to the Lord, for he gives thanks to God; and he who abstains, does so to the Lord and gives thanks to God. For none of us lives to himself alone and none of us dies to himself alone. If we live, we live to the Lord; and if we die, we die to the Lord. So, whether we live or die, we belong to the Lord.
For this very reason, Christ died and returned to life so that he might be the Lord of both the dead and the living." - Romans 14:5-10

He cocluded, "For the kingdom of God is not a matter of eaating and drinking, but of righteousness, peace, and joy in the Holy Spirit, because anyone who serves Christ in this way is pleasing to God and approved by men.
Let us therefore make every efford to do what leads to peace and to mutual edification. Do not destroy the work of God for the sake of food. All food is clean." (Romans 14:17-20)

I am not a Christian neither a Muslim, the reason why Christian don't follow the dietary law, is because it was believe that these unclean animals were already clean by our Messiah. Quoting Matthew 15:11 which was quoted out of context. The dietary law remains as what the Messiah said on Matthew 5:17 - 19. We still follow the dietary law given by Yahweh Elohim. Please visit http://www.yaim.org/ for our literature about Clean (Kosher) foods.

Some of them were very good rules. But they were not commandments. The old testament had many ceremonial laws that were no longer in effect in the new testament (contract). The Ten Commandments are still in effect, the ceremonial laws are not. Jesus came to complete the law (the commandment) not to end them. The laws Jesus gave far surpass the Ten Commandments and show us our need of redemption. The Ten Commandments said: thou shalt not kill, Jesus said, "but I say unto you do not even be angry with your brother." and etc.
We could follow some of the ceremonial laws if we want to and many are followed today by choice.

Acts 11:

4 But Peter began, and explained to them in order, saying,

5 "I was in the city of Joppa praying, and in a trance I saw a vision: a certain container descending, like it was a great sheet let down from heaven by four corners. It came as far as me.

6 When I had looked intently at it, I considered, and saw the four-footed animals of the earth, wild animals, creeping things, and birds of the sky.

7 I also heard a voice saying to me,'Rise, Peter, kill and eat!'

8 But I said,'Not so, Lord, for nothing unholy or unclean has ever entered into my mouth.'

9 But a voice answered me the second time out of heaven,'What God has cleansed, don't you call unclean.'

10 This was done three times, and all were drawn up again into heaven.

Because the Mosaic Law was not given to Christians. It was given to the Jews, who do in fact still follow the laws of the Old Covenant. Jesus however, replaced the Old Covenant with a New Covenant, under which "it is not what goes into a man that makes him unclean, but what comes out of him".

They even Ignore JEsus (pbuh) order to abstain from eating pork Leviticus 11:7, but as you know who are the christians to follow Jesus, they would most rather follow Paul, who made it acceptable for them.

So you christians if you allow people and priests to change the laws of your own religion, why not just worship them?

mainly because most Christians aren't followers of Jesus (who apparently said in Mat 5:17 "Think not that I am come to destroy the law, or the prophets: I am not come to destroy, but to fulfill") but are followers of Paul. the earliest Christians were a small Hebrew sect and one had to be a Jew or convert to Judaism in order to be a Christian. Paul undermined Hebrew law so as to make it easier to convert the Gentiles to Christianity. most Christians aren't so much "Christ"ians as Paulists.

then there's the very practical reason that those animals who were fobidden to be eaten were those that carried disease or parasites that could make the consumer (eater) sick. now that we have better hygeine and understand why people got sick after eating for example pork, we know how to prevent it. Usually it's Jewish people that keep kosher that follow these dietary laws.
