Fudge should be made no earlier than a few days before. Cookies can be frozen and thawed the day before the party. Chocolate covered pretzels should be made the day of.
Go ahead and start the cookie baking. The 11th or 12th should be used for making fudge. The 15th or 16th used for making chocolate covered pretzels. Make sure you have PLENTY of wax paper.

We had a debate over this issue two years ago. My daughter and I are not bakers and told her German born & bred husband that the beginning of December was way too early. He did it his way and wow, we enjoy his cookies through out the month of December. No freshness issue. The only problem I've found is he won't give up the recipes his Mom e-mails him and they're all in German.

Do your dipped pretzels now IF you can keep them airtight, otherwise they might get a white powdery look called bloom
Fudge can be done now and wrapped tightly in plastic, cut just before serving.
Crispy cookies like gingersnaps can be done a week or two in advance
drop cookies like choc chip or oatmeal only a few days will do.

nope....but you may want to consider making the dough, freezing or refrigerating it first, and then baking it week of/weekend prior, just to save time. That is what we are thinking of doing...enjoy!
