A simple rule-of-thumb ....

The brighter, the darker, the more colourful, and the fesher the type of fruit or vegetable, generally the higher the nutrient content. It's especially true for foods with Vitamin A, C, E content, and mineral contents such as iron and phosphorous.

Another rule of thumb - the vitamins listed above are all water soluble. To save/increase the nutrient content of the foods you eat: use small amounts of water to cook them - steaming is best.
Boiling is very common, but be certain to use no more than 1-2" in a standard saucepan. Save the water for great tasting soups, sauces, and gravies. Any nutrients dissolved into the water will be part of the juice.

A final tidbit: Many cooks are very careful about using good cooking techniques, but have already lost a lot of nutrients - here's why.

When fruits and vegetables grow, the nutrient layer is set down directly below the skin. You can see the nutrient layer easily if you cut a potato or turnip in half and see a ring around the food. When someone peels a food with a paring knife, it is almost impossible to cut the skin so thinly that the nutrient layer is kept in tact - often it is cut off even before cooking. A vegetable peeler usually takes a thinner slice off the food, so is able to keep the nutrient layer in better condition.

Best of all, eat fresh well-washed vegetables to get maximum nutrient content.

*Okra browned in a little Virgin olive oil before cooking, is a great compliment to lamb stews and brings out its really tasty flavour. Many people don't like okra and the reason usually is because it's not been cooked the right way. There are many ways and special ways to cook each vegetable.

* Long green beans cut and also browns a teeny bit in Virgin olive oil, brings out its great taste- also add to stews.

* Always have a bunch of Parsley, it adds such a wonderful flavour to many recipes.

well, I love vegtables, i can litterallly be a vegetarian. litterally! welll, I also believe that you shouln't have alot of GREEN vegtables. so if you like spinach, and asparigus, or broccoli. then this wouldn't be the best choice for you. for me, i canlt go without green. spinach is my favorite. aspecailly when you put it in that zuppitascana. That sup from olive garden . that has that white broth, with sausage, spinach, potatoes.( I have to watch out for potatoes) umm, and all of that good stuff. well, you should try it some time. alright. welll. hopefully tht helps. :-)
