maybe because some real baby ducks are yellow. i have seen them making rubber ducks in other colors now though...like blue and orange etc..

not all rubber ducks are yellow but most of them are yellow because when people think of ducks they think of a yellow bird.

That's the color that the person / people who made the first one chose. I'm not being a smart aleck, but if you have one and would rather it be a different color dye it.
