It's all in the spatula. And once you flip it just keep it there for a bit, like 20 seconds or less. An over easy egg has yoke left. Now I'm hungry.

i actually appreciate making Easter dinner. I serve ham with a cherry sauce, deviled Easter eggs, potatoes au gratin, asperagus, and salad. additionally warm go buns from a bakery, with lemon curd. u put oil in pan,,and make it more than usuall
then when one side is cooked u use your spatula to gently push the oil over top of the egg and it will cook without having to turn it,, check the middle with tip of spatula and u will see a little giggle when its done
