Because when "we" had a flee our oppressors many years ago the breads people were baking had to be removed before they had a chance to rise. Therefore we consume nothing with leavening agents during Passover to remind us of how quickly we had to flee and how life can change in a split second. We also are taught to be thankful that our religion has continued despite many attempts to destroy it. The story is told and retold every Passover so that our children also learn to be blessed that they were born into such a resilant religion.

When the Jews left egypt they ate bread without yeast, unleavened because they didn't have time to wait for the bread to rise. Also, often yeast is used as a symbol of sin and it was to remind them to live lives free from sin

Bread is normally full of air bubbles that make it seem to be more than it really is. This represents haughtiness. Every once in a while it is good to check yourself to see if you are doing anything haughty that you might not even realize. So, once a year we eat flat bread to remind us not to be haughty.
