half to 3/4 of the junk/trivia is never used in conversation. and the other half to 1/4 is moderately needed to do work/function everyday.

The direct answer to your question is the human happiness . we seek knowledge to be civilized to make your lives happier.
Most of the knowledge you got is not used directly , it's a mere means of broadening your mentality. For instance, I studied alot of math, then I specialized in literature. I can't say that it was in vain math helps you think in a straight way not in circles.
Some people have a lot of knowledge and they can't act or behave properly, I can tell that their knowledge is useless.

You don't find knowledge here. Here you find, as you called it, junk/trivia. And it is nearly useless, except to have an interesting time on the internet at 4 in the morning.
But real knowledge is something else. If you find some (it's hard to come by) savor it. It has led to all of the great breakthroughs of man: from flight, to vaccine's, to Spam, ham in a neat little can.

Aside from the trivia and useless bovine fecal matter what would we do without knowledge? Maybe return to cavemen times. Even they had some life saving knowledge .Not all important info is bound to be earth shattering after so many years.Do you live in some kind of shelter? It took knowledge to construct, didn't it?

Since nothing is certain and nothing is impossible, anything and everything that we think is knowledge or logical is merely a current belief.
Yet, acquiring current knowledge is of immense necessity for the time being to live reasonably well. It is like a store of engineering spares, you need to keep everything since one does not know which one is going to be suddenly required for immediate use and when...... and if you get caught without having it at the crucial moment, you will incur irrepairable loss.

Coupled with Wisdom, knowledge changes the very quality of everything we do....
Even a sweeper would 'think' of inventing a vacuum cleaner (referring to a time before it was invented) , with knowledge about the dust, sweeper, adhesiveness of dust , etc etc.. and ofcourse the wisdom about how humans would respond to innovations, etc...

it breaks the monotomy of life....
for example...everyday you have a peanut butter sandwhich and on the night of that day you have a fruit jam sandwhich..how about your lunch......with "knowledge" you could combine them together and create a PBJ sandwhich...
of course this applies to PBJ...you cant mix ketchup and soy sauce??.....can you??
