What a lot seem to miss is the fact that the Spanish people were Caucasian people who interacted with the Indians of the area to basically come up with the Mexicans, and Chileans, and many people in South America who are half white and half Indian nationality. What's the big deal?

Neither, it's just her reasons (personal and emotional). So you have to respect that. Maybe try to understand where she's coming from. She might have had bad experiences with whites, not the fact that he's chilean. She doesn't deny he is chilean, but that chileans, like her dad, are white. Chileans must seem so nice to her, but to call or say their definition is white is to associate them with every ignorent, disrespectful, bigot or caging racial idea she experienced from: white. You know what it's like, but maybe she needs to talk to someone about it.
So, if she wants to talk, ask her what's this (her pained/distraught emotional reation) is all about.

Chileans aren't the whitest Latin Americans, but the very upper crust is. The Argentines, Uruguayans and Costa Ricans are the whitest. But anyhoo, there's nothing wrong that; it's just part of the history and demographics of those who constitute a nation.
