Well... I'm an American currently living outside of the United States (not in Iraq though). A good thing to send would be of course some homemade sugar cookies! But stuff I personally miss around this time of year are things like candy canes, and other Christmas candy. And reese's peanut butter cups. I love them but can't get em where I live. Stuff like that is like a little taste of home. Also include a letter to thank them for all they've done for our country, and maybe a little bit about yourself and family, and what you like most about this time of year.

Go to anysoldier.com and get ideas. My brother is on a ship, but he's not in Iraq, so he wants different things. I hear they want food items & movies.

Hard candy, gum, lolly pops, slim jims, individual powdered drink mix, mac n cheez snack cups. Books, magazines, dvds, phone cards, old game boy games, powder, soap, body lotion... I could go on for ever.
Hope this gives you some good ideas..

Starbucks Coffee (make sure it's ground), they use it for trade and to remind them of a slice of home.
