their place to protect workers. The sole purpose of existing in business is to make money
And you need people in place to accomplish your mission. The first answer was bang on.
Treat each person as you want to be treated, pay them above scale with good benefits,
Motivation moves people, people move business. An unhappy work force in the hospitality industry will kill business faster than a fire. As one who moves about the continent I would avoid or change my hotel at the first sign of disgruntled employee’s.
I could never be sure of what they would do to my food or room to get back at management.

1. Pay your employees a premium "above scale" wage.
2. Offer the same benefits to them that you would want for yourself.
3. Treat them better than any union ever would.
4. Perhaps "break" is too negative a term. If you seek to break or "bust" a union, it's easy to spin opinion against you. Why not seek to do for your employees what the original intent of unions was...?...partner with them toward mutual success....
