I don't know of any that include free nights and weekends, and that includes Tracfone. Cingular has a prepaid plan that offers free mobile-to-mobile, but you will pay a $1 daily surcharge for every day that you make or receive a call. Otherwise, their simple prepaid plan is actually a bit high at $0.25/min. I find T-Mobile prepaid rates to be extremely competitive. $100 refill gets you 1000 minutes ($0.10/min) which last for one year.
Both Cingular and T-Mobile roll over your minutes when you refill. When you buy $100 in refills from T-Mobile, you get Gold Rewards status which extends the expiration by one year for all subsequent refills regardless of the dollar amount. Tough to beat if you are a light user.

Verizon Easy Pay but it's a bit more expensive than your average pre pay. A flat 50.00/month fee includes the benefits of a contract plan without the contract. 350 daytime (6am-9pm) minutes to any phone, free Verizon to Verizon any time of day, and unlimited nights and weekends.
