Many, if not most employers, require employees to work a full scheduled shift the day before and the day after a holiday.
Other possible reasons might be found in your employee's handbook.
It's hard to say without hearing both sides of the story. But if you feel you have been wronged, persue it. And, just for your own safety, keep a written log with ALL the information you need to make your case.
Not a lawyer here! Just my humble opinion!

If there was any disclosure given to all employees like only those with at least 5 years service are eligible for Thanksgiving pay. Otherwise, it would be illegal discrimination. I doubt employers would risk discrimination.

Yes he can, as long as the difference is not motivated sex, race, or some other protected category, which would make it sexual, racial, etc discrimination -- otherwise it is fine.
For example an employer may choose to reward only BEST employees with extra pay.

If an employer want to give money to certain people and not others as a gift, this is legal. What is illegal is, if you work and don't get paid for services rendered.

If there is not policy stating exactly what the employeer will do, it's his money he can pay as he pleases. We have had this problem for quite a long time....
