Because many of them were being persecuted for speaking against the English rule. They felt that if the people were going to govern themselves, then they should be allowed to express their point of view.

Fledgling America was already breaking away from England and it's King. None of the founders wanted another King, but finally agreed to three branches of government, that are supposed to balance each other. This included a free press that was not government controlled (slanted by government influences) and not having churches, like the church of England that were government controlled.... These Purists wanted to be free to worship or not to worship, not be demanded or commanded to worship..Sounds like today's news doesn't it? This is exactly why people are screaming about the activist judiciary or Executive orders being executed improperly and not enforcing the Constitution the way it is written. It is a Purist ideology of a democracy.
For example: At one time the term "men" was literally read, excluding it's real meaning "mankind" which was and is inclusive of women and minorities that were not considered human and or property....It came down to one set of morals vs those with money and power to influence. to your first question, well, they didn't. It was demanded by Several states that they would only allow the constitution to become binding law if a bill of rights was added. the federalists promised it would e added, and the bill of rights was passed.
The main reason was that they wanted to be sure that the government could never take over the media and that truth could always be reported, whether the government liked it or not.

Because a gov't controlled press is a little more than a tool to spread what the gov't wants the people to read. Case in point, Pravda was the gov't controlled newspaper in the USSR. Pravda means "the truth." Would you ever buy a newspaper published by the US gov't called "the Truth"?

they did not. that was not included until the bill of rights which passed under james madisons administration. they included it because they wanted people to say what they thought with out fear of repercussions like they had under british rule and like they have in modern dictatorships.
