I remember the end one from Enter the Dragon I think with Bruce Lee, and the guy with the claw. That was a good one.
Another one I also like is from "Kung Fu Hustle", the first one with the Axe Gang vs. the 3 kung fu masters.
I almost forgot, the fight scene for LOTR: Return of the King, on the fields of Pelennor outside Minas Tirith, I thought PJ did a great job of transferring that from the book to the movie. Well, ok, maybe he overdid it a little bit on the cursed warriors that Aragorn summons, but still, very good.

Jackie Chan vs. Sammo Hung vs. some guy in a three way fight. It was pretty good. The movie was Dragons Forever.
But the best I thought was Bruce Lee v. Chuck as you said.

When Uma Thurman fought the crazy 88s and then Lucy Lui in Kill Bill: Volume 1. There are many other great ones though.

No one's mentioned "John Carpenter's 'They Live'", which had an unbelievably long and brutal fight scene between pro wrestler/actor Rowdy Roddy Piper and character actor Keith David. (Perfectly aped in a South Park episode fight between Timmy and Jimmy.)
On the total flip side, my other favorite, the sword fight between Wesley (Cary Elwes) and Inigo Montoya (Mandy Patinkin) in "The Princess Bride".

Anakin Skywalker Vs. Obi Wan Kenobi in Star Wars Episode 3: revenge of the sith. it was the best fight scene i have EVER seen in movie.
