I have to take a week off from running. I just finished my Cross-Country season, and next week will be starting my winter track season. Will this 1 week off from running cause me to lose my cardiovascular fitness, my strength, or my speed? I'm really scared that I'm going to feel COMPLETELY out of shape next week, after everything I've worked for for the past months! If the answer to my question is yes: how long will it take to gain it back?

Taking a week off will not mess up your cardiovascular fitness, strength or speed. I always take a week off after I've run a marathon to give my body a bit of a break, and I always get it back pretty quickly (and I suspect I'm quite a bit older and less resilient than you).

I suspect that you may feel a little less skilled your first week back on, but that'll also partly be due to the fact that you'll be training differently for X-country versus track.

You will not lose be completely out of shape in just 1 week. Unless you are having medical problems there may be some other exercises that you can do to keep up or at least not lose as much ground.

No, you may find the first run a little tough but after that you will be fine.
