the lighter elements would be layered deeper gradually down, the center being the atmosphere to almost vacum in the center(is it possible to create a model?)

No change to the gravitational field as long as everything was spherically symmetric. Any spherically symmetric body can be considered as a point mass, as far as gravity anywhere above its surface is concerned.

As far as I know Gravity is determined by mass and centrifgul force to a degree, so mass distribution would not matter.
