Let them know that you appreciate the offer but that you had a better one. If they try to talk you into it (unlikely, honestly) then they will most likely do it in a manner that leaves the door open, not in a pressuring manner. If they do attempt to pressure you, then keep repeating the first line, letting them know that you appreciate the offer but that you've had a better one. If they want to know the details of the better offer, tell them that you are sorry but you are not of liberty to disclose that information.
Follow that up with a card thanking them for their offer and wishing them a happy holidays.

Just like that. Write them a letter of declination. Let them know that you originally thought it would be something you would like to pursue based on the advertisment. But after your interview you realized that you were not the person who would be best for the position.

If you haven't done anything for them, then you are not letting them down.
Just tell them that you appreciate them offering you the job, but you have decided to take your career in a different direction right now.
If they try to talk you into it, say the same thing again - very sweetly but sternly.

From the above, I like "I am sorry, but I do not believe this is a good fit for either one of us" the best.
Apologize, saying that you want to do what's best for them... and you. And thank them for the opportunity.
