I wouldn't move them, let the babies get old enough. Convicts are good parents but may well eat their offspring is overly stressed.

If you are desperately needing to move the eggs and the cichilids, then you can move the parents and siphon the eggs (like you would when you are cleaning your tank) but have the other end in the other tank. Note that this is very risky and you may lose some eggs.

Cichlids are generaly good parents. try leaving them in the tank they might be able to handle it but if you must than use your hospital tank (assuming you have one) or start a new tank soon.
I know about cycling so just add some chemicals to the water and add a mature filter with a couple scoops of mature water from your other tank this should get rid of the need to cycle.
