Actually... in terms of wine-making, unripened grapes are referred to as "Green"... which means "The nose of wines made from unripened grapes. Associated with a high acid bitterly sour or highly astringent taste. Connected with leaf alcohol and leaf aldehyde."

They are commonly call "green grapes".
You can take green grape(up until the seeds really harden) and make a wonderful pie or cobbler. Just cook the green grapes in the microwave for 5 minutes the proceed to make your favorite cobbler, pie, or even fried pies
