Can he pull a goalie then put him back in to get the goalie/player matchups he wants? Or, once he's pulled is he done?

No. This is covered under Rule 89, Part B of the NHL rules:

"(NOTE 3) Once the shootout begins, the goalkeeper cannot be replaced unless he is injured. No warm up shall be permitted for a substitute goalkeeper."

You can swap goalies during regulation and overtime all you want, but that changes once the shootout begins.

During the game you can switch at any time you wish, as in a shootout you have to pick your goalie you think is doing the best and the only reason you can switch is if that goalie gets injuried.

Yes, he can switch. If he is injured.

I saw once this year where they put the backup in for the whole shootout when he didn't play all game. They lost.

Some coaches do that in regular season. Switch goalies in regulation and switch back a minute later. Either a delay tactic or to get the team/goalie to smarten up.

You can switch him BEFORE the shootout begins, but, baring an injury, not during the shootout. In Edmonton Craig Mctavish once took out Ty Conklin who had played the whole game and overtime, and replaced him with Markennan. They still lost the game, but it was a good try.

Craig is right here you can not replace a goaltender during a shootout unless there is an injury. If there is a injury no warm ups will be allowed.

Once a goalie is pulled from the game, he's done. Unless it is at the end of the game and he is pulled so an extra attacker can be put on the ice.
