Depending on age and the money situation here are a couple of suggestions.
If she has a favorite movie that you both went to see buy the DVD. Same goes with concerts and buying the CD or an i-pod shuffle with the music on it.
Jewlery is nice but don't go there unless you plan to get serious in the next 6 months.
Clothes are always a good gift for the younger dating (still in school)
If you want to spend a little more - take her on a day trip (skiing, hiking, a place that she has wanted to go but has never gotten around to going)

ok Flea... Really think about your girlfriend... what do you know about her? What is something she really enjoys? Something she would never get for herself and something NO ONE ELSE could give her... earrings or a necklace might be it but I doubt it - maybe she loves books or art? My friend's boyfriend bought her a canvas and some paints one year - he knew she use to love to paint and hadn't done it in a LONG time - SHE LOVED the gift - it made her feel special and appreciated and like he REALLY knew her. She paintd a really nice abstract piece of art and he surprised her by proudly hanging it in their livingroom as soon as the pait was dry. Really, anyone can get someone a necklace but not everyone would know she loves to bake or has always wanted to take a guitar lesson or go in for a ride in a hot air balloon. Make her a beautiful Christmas dinner. Complete with candlelight and misletoe. She would be so surprised and brag about you to all of her friends. That memory would last a lot longer than a bottle of perfume. Plus, it's not as expensive.

How about a night in with you, buy her favorite movie (even a chick flick) wrap it with a bag of microwave popcorn her favorite beverage and a note saying that she can pick one night and you two will watch the movie together. Then the night she picks make it a point to turn off your cell phone and hers and unplug the phone in the house then snuggle together and watch the movie.

what does she like? No one gift is perfect for everyone, for instance, I would love to get a copper saucepan, but she might turn up her nose unless its a diamond watch. Find out her likes and dislikes and go from there

Depends on your income I guess. If you can't afford too much then maybe a CD or DVD that you know has special meaning for her. If you can afford a bit more then jewelery is always a safe bet in my opinion.

im in that exact place right now brother. I would say get her a necklace or something she can wear, around $80-$100. If she likes that of course, i dont know your girlfriend, lol.

You need to get her something to show her that you really care about her, but not something too much or she wouldn't know how to react. I suggest maybe some expensive perfume with a card saying how much you care for her, or something like that.
