First are you in need of it all? My mom loved to sew and she collected it from all sorts of sources including collecting old clothing scraps. So if you can declutter it, do so. If you don't have a project in mind for it, you may not want to keep it.

Then sort it by types, weights/seasons, home/clothing/crafting, etc, and if certain pieces go with others for the same finished item, keep them together. Fold into similar sized piles and stack them neatly, if space is a problem, maybe you can hang them up. Label the container or shelf where it will live. Try not to cram anything too full.

If you are using a closet, some rough tote type containers in the bottom can hold batting, and other poofy things and shelves can hold your piles of fabric. Small baskets can hold remnants and notions. Perhaps you can hang a shoe bag shelf type thing on the rod, then put the items in baskets and use the shoe holder like a drawer system? Or a clear shoe bag with pockets to hold other sewing supplies...you can hang from a peg board, hang on the wall, or hang over any door.

Sorting them by color instead of type or style is how it is done at the Designer Showrooms.
