Look for a waitressing job. Tips are killer. If you have to take some service job (grocery store, food service, etc.) to fill in the hours after your main job, then that's not hard to find either.

Hmm good question.
"Without a lot of extra time" would exclude things like child-care, etc. So we have to be creative.
Probably the best thing you could do is to put some money into a 1year CD at your local bank. This would earch you 5% or so.
You could do pet sitting. This is less strenuous to your time than child sitting. esspecially something like cats where you just have to make sure they are ok.
You could do some volunteer work or other types of networking to get your name out there!!
Not sure without knowing your skills, and everything involves so much time that is hard to escape...
Here is an idea but it would involve research on your part and some work. Ready?
Learn to PAINT! That right, an Artisto!~ We all know it doesn't matter what the heck it looks like right? So neither do we care what yours looks like, it will be unique and could bring in a couple thousand dollars a year if you get serious. By serious I mean making sure you have a proper canvas and technique etc that would make it a true painting. There are sooo many avenues to sell your work that selling it would be the least of your problems.
In a similar vein you could try small furniture restoration. Huge money in that!
God Bless you.

You might investigate mystery shopping. NEVER PAY TO SIGN UP as a mystery shopper. A mystery shopper provides a service and therefore earns money.
One exception - but only if you decide you are going to do it. For 15 dollars, you can take a test on line for MSPA silver certification.
That certification may get you in some doors over those who did not take the silver certification test.

There are numerous opportunities on the Internet, and to try to be helpful, I will share a link with you that I found from reading a previous similiar question on Yahoo Answer that helped me to make extra money in my free time...From this site (free) I received a few pointers on making money from doing surveys, what to sell on "Auction sites", setting up my own webpage/blog, "reading" emails etc..
Hopefully you will find this answer helpful!
