It's really pretty simple. He watches the Player King go through the whole "Hecuba" business, and we know (from Polonius' interjection) that the old actor actually has tears in his eyes while reciting.

The Player King's impromptu performance is obviously supposed to be very affecting, especially to Hamlet. Once the stage is clear ("Now I am alone..."), Hamlet beats himself up for the fact that the ACTOR can summon emotion over fictitious people and events (...in a dream of passion..."), whereas Hamlet feels that he hasn't (yet) been able to get properly worked up over the murder of his father.
